Banana Bread Muffins

I came across a top rated recipe for Banana Bread on Allrecipes. I usually don’t make banana bread because it comes out too dry or not done enough.  Since I had old bananas on hand, I thought I would try making muffins instead.  Guess what?  They turned out perfect.  I only had 3 bananas so I split the recipe in 1/2.  It made 8 muffins.  They were done in 1/3 of the time it would have taken to make bread.  Gotta love that.

 

Banana Bread Muffins

Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 2 eggs, beaten
  • 2 1/3 cups mashed overripe bananas (about 6 medium bananas)
Directions
  1. Preheat oven to 350 degrees F. Place baking cup liners in the muffin pans. This recipe makes approximately 16 muffins.
  2. In a medium bowl, combine flour, baking soda and salt. Set aside.
  3. In a separate bowl (mixer bowl), cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended.
  4. Stir flour mixture into banana mixture; stir just to moisten. Scoop batter into prepared muffin pans using a large ice cream scoop.
  5. Bake in preheated oven for 20 to 22 minutes, until muffin bounces back after being lightly pressed. Let muffins cool in pan for 10 minutes, then turn out onto a wire rack.

Blueberry Muffins

The first time I made these was for a good friend’s wedding shower years ago.  They have been a hit ever since.  I love these the muffins and pretty much everyone that has them thinks the same.  Well with the exception of my husband ;-)  But I promise if you make these, your kids, friends and coworkers will enjoy them.

Muffins
1 ½ cups all purpose flour
¾ cup sugar
½ teaspoon salt
2 teaspoons baking powder
1/3 cup canola (or vegetable oil)
1 egg
1/3 cup buttermilk
1 cup fresh blueberries

Topping
¼ cup sugar
½ of 1/3 cup of flour
2 tablespoons butter
¾ teaspoon ground cinnamon

Preheat oven to 400 degrees F.  Line muffin tin with 10 muffin cups.  Wash blueberries and set aside.

In large mixing bowl, add flour, sugar, salt and baking powder. Mix.

In a glass measuring cup, add 1/3 cup oil.  Add egg.  Then add enough milk to make 1 cup.

Add liquids to flour mixture and mix until combined well.

Add blueberries and mix just until blended.

Scoop muffin batter into muffin cups. A large ice cream scoop perfect for muffins.

In small bowl, add sugar, flour, cinnamon and butter.  Mix with fork or hands until crumbly.  Of course, I recommend your hands.

Sprinkle on top of muffins. Bake at 400 for 20-25 minutes until tops are lightly brown

More Pumpkin Please – Pumpkin Bread

I have been seeing pumpkin lattes, pumpkin pies, pumpkin everything everywhere.  I really wanted to bake pumpkin bread.  I have to admit I don’t like baking bread loaves because I always over cook them trying to make sure they are done.  So I took my pumpkin bread recipe and made pumpkin muffins.  The results were moist and delicious!

Pumpkin Bread Muffins

Ingredients

3 cups sugar

1 cup vegetable or canola oil

4 eggs

1 small can pumpkin

3 cups flour

1 teaspoon cinnamon

1 teaspoon nutmeg

2 teaspoons baking soda

1 1/2 teaspoons salt

2/3 cup water

1/2 cup chopped pecans, optional

Preheat oven to 350.  Line muffin tins with paper cups .

Mix together sugar, oil, eggs and pumpkins.  Mix flour, cinnamon, nutmeg, baking soda, and salt in separate bowl.  Incorporate flour mixture into sugar mixture alternating with water.  Stir in pecans.

Pour into pans.  Bake 20 minutes until muffins spring back when lightly touched.

Serve with butter and enjoy!

Makes 2 1/2 dozen muffins.

Banana Crumb Muffins

I tried this recipe this week. I am have been looking for a good banana muffin recipe and boy did I find it. It is moist and the brown sugar topping really compliments the banana.

Ingredients
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

Directions
Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.

In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt.

In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.

Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
