Breakfast Hash Brown Casserole

This is a delicious breakfast casserole.  The hash browns with ham and cheese topped with scrambled eggs taste great.  I usually serve this with biscuits.

Hash Brown Casserole

recipe by Steve & Sue Packer

Ingredients:

1/2 stick butter + 1 tb butter

1/2 bag frozen hash browns

1/2 onion, chopped

1 cup diced ham

salt & pepper

1 – 1 1/2 cups shredded cheddar cheese

8 eggs

dash of milk, cream or half & half

Directions:

Preheat oven to 350 degrees.  Spray baking dish (pie pan or 8 x 8 square baking dish) with pam.

Melt 1/2 stick butter in a skillet over medium heat.  Add onions and cook until clear.  Add hash browns and ham to onions.  Salt and pepper the hash browns.  Cook about 5 minutes, then turn and cook another 5 minutes.  The hash browns should be lightly brown.   

Remove from heat and transfer potatoes into prepared baking dish.  Top with 1/2 – 3/4 cup shredded cheese.  Place in oven for 5 minutes until cheese is melted.

Meanwhile, melt 1 tablespoon of butter in pan.  Crack eggs into a separate bowl, add a dash of milk or cream or half & half.  Salt and pepper.  Whisk eggs until smooth.  Pour into pan.  Cook until eggs are a soft scramble.

Pour eggs over the cheesy hash browns.  Top with remaining cheese.  Place in oven for 2 minutes until cheese is melted.  Remove from oven and enjoy!

Chex Mix

This is my mother’s recipe for Party Mix.  I believe it came from my grandmother.  It’s me & my brother’s favorite chex mix.  We start looking forward to it each Fall.

Chex Mix

Ingredients

1 box Rice Chex cereal

1 box Corn Chex cereal

1 box Wheat Chex cereal

1 box Cheerios (optional)

1 bag Pretzel sticks

1 can (2 cups) mixed nuts or pecans (optional) 

1 lb butter

2 t garlic salt

2 t celery salt

4 T worchestershire sauce

3 – 4 T tabasco sauce

Red pepper to taste

Directions

Preheat the oven to 225 degrees. 

In two large pans (preferably 12 x 18 cake pans), pour half of the cereals, pretzels and nuts into each pan.  Gently combine the mix. 

In a medium saucepan, melt the butter on medium – low. Add the remaining spices.  Stir then pour half on each pan of mix.  Stir the mix gently to coat.

Place the pans in the preheated oven.  I usually place one pan on the top rack and the second pan on the next lower rack.  Bake for 15 minutes. 

Remove the pans, gently mix the party mix.  Place pans back in the oven on the opposite racks so that they are rotating oven position each time.  Bake another 15 minutes.  Repeat this process until the mix has baked 2 hours.

Cool and enjoy!

Store in airtight containers.

Gold Medal Dessert

My Aunt Sue made this dessert years ago and I fell in love with its cool creamy texture.  I typically made this dessert in the Summer but it can be served anytime of the year. 

 

Preheat oven to 350 degrees F.  In a medium mixing bowl, combine pecans, flour, and butter. Press into a 9x13 inch pan. Bake for 20 minutes. Allow to cool.

In a large bowl, beat together cream cheese and confectioners' sugar until smooth.

In a large bowl, combine milk, chocolate pudding mix, and vanilla pudding mix. Beat until thick. Pour over cream cheese layer.

Top with remaining Cool Whip.

Grate Hershey’s bar over the top of the dessert.

  • 1 cup finely chopped pecans
  • 1 cup all-purpose flour
  • 3/4 cup butter, softened

 

  • 1 (8 ounce) package cream cheese, softened
  • 1 cup confectioners' sugar
  • 1 (16 ounce) container Cool Whip, thawed, divided

 

  • 2 1/2 cups milk
  • 1 small package instant chocolate pudding mix
  • 1 small package instant vanilla pudding mix

 

  • 1 Hershey’s bar milk chocolate
Directions
  1. Preheat oven to 350 degrees F.  In a medium mixing bowl, combine pecans, flour, and butter. Press into a 9x13 inch pan. Bake for 20 minutes. Allow to cool.
  2. In a large bowl, beat together cream cheese and confectioners' sugar until smooth. Fold in half of the Cool Whip. Spread on top of cooled crust.
  3. In a large bowl, combine milk, chocolate pudding mix, and vanilla pudding mix. Beat until thick. Pour over cream cheese layer.
  4. Top with remaining Cool Whip.
  5. Grate Hershey’s bar over the top of the dessert.
  6. Chill for several hours then serve.

Aunt Christi’s Sweet Potatoes

Everyone loves Aunt Christi’s sweet potatoes.  She was kind enough to share her recipe.

Sweet Potato Casserole

recipe by Aunt Christi

4 to 6 sweet potatoes peeled, boiled, drained and mashed
1 cup sugar
1/2 tsp salt
1/2 stick butter
1/2 cup flour
1/2 milk
2 eggs
1 tsp vanilla

Mix potatoes, sugar, salt, 1/2 stick butter, flour, milk, eggs, and vanilla. Put in buttered dish.

Topping
1 cup brown sugar
1 cup pecans, chopped
1/2 stick butter, melted

Melt butter and mix in brown sugar and nuts to make the topping. Spread on top of sweet potatoes and bake at 375 until brown approximately 20 minutes.

Sausage Balls

I love sausage balls.  We had these as a kid on special occasions.  Now as an adult I have made these a dozen times or so.  Every time I make them though, I get frustrated because it is difficult to completely incorporate the baking mix into the sausage.  Then I came across a recipe on the internet that mixes the mixture using a Kitchen Aid mixer.  Ah-ha!  Behold, the perfect sausage ball.  No need to wait for a special occasion.  Make them today.  Your loved ones with will love you more!

Let’s get started.  Preheat the oven to 350 degrees.  Add sausage and bisquick mix to mixer.  Mix on low until bisquick is well incorporated into the sausage.  Stop the mixer and scrap down the sides.  Add grated cheese and mix on low until well incorporated.

Using a spoon, roll the mixture into1 inch balls.  Place on a parchment lined baking sheet.  IMG_3484

Bake for 20 minutes until golden brown.  Serve warm.

3 cups bisquick mix

1/2 lb sharp cheddar cheese, grated

Preheat the oven to 350 degrees.  Add sausage and bisquick mix to mixer.  Mix on low until bisquick is well incorporated into the sausage.  Stop the mixer and scrap down the sides.  Add grated cheese and mix on low until well incorporated.  Using a spoon, roll the mixture into1 inch balls.  Place on a parchment lined baking sheet.  Bake for 20 minutes until golden brown.  Serve warm.
